Decorating

I had so much fun preparing for our family Christmas this year!  One twist I did for place settings was to make a favor with the guests name on it and place it on the plate.  So each person had a favor and a “place card”, so to speak.  The favor was a jar of cookie mix.  Cowboy chocolate chip for the guys and either M&M or pecan muffin mix for the ladies.  I ran out of jars and WalMart did as well, but they had cute Christmas tree ones, so some people had those instead.  I liked them all and really enjoyed making them.  🙂

I also wanted to post a picture of Joshua’s park since I told you we would make it festive.  🙂

Pumpkin Black Bean Chili

SO SO SO SO GOOD!  Especially with cheddar cheese on top and a side of tortilla chips.  🙂

SLOW COOKER VEGETARIAN BLACK BEAN PUMPKIN CHILI

Ingredients

  • 3 15-ounce cans black beans, drained
  • 2 14.5-ounce cans plain diced tomatoes
  • 1 cup pureed pumpkin (not pumpkin pie mix)
  • 2 cups diced yellow onion (about 1 medium onion)
  • 1 medium yellow bell pepper, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon ground cloves
  • ½ teaspoon kosher salt
  • ½ teaspoon coarse ground black pepper
  • Assorted toppings of your choice like shredded cheddar or jack cheese, sour cream, avocado, cilantro, or our favorite topping for this chili, Tapatio sauce

Instructions

  1. Add all ingredients to a 4-quart or larger slow cooker. Stir.
  2. Cook on low for 8 – 10 hours.
  3. Serve with assorted toppings.

Weekly Update

More progress!  Woohoo!  My BMI is now down to 19.8.  It has taken so long but I am glad to see progress.  I know that I have lost a little muscle to achieve this, but I also know that I had to lose muscle and fat to achieve this.  I have not yet reached my goal, but am excited for the progress during such a season of food fests.  Because of the constant food temptations, I have not kept up all the healthy eating rules I should and I do need to be more disciplined.  BUT…progress is happening.  🙂  So the next goal is to keep the progress consistent and get back to healthy habits.  😉

This year has been a difficult Christmas for so many…with big or little disappointments or even tragedies.  It wasn’t very long ago when my husband and I were going through a dark Christmas with the loss of our Joshua.  Something to keep focused on and to hold dear is that Christmas is Jesus coming to earth from pure perfection for the sole purpose of saving us.  Trust Him.  Believe in Him.  Accept His gift of forgiveness.  Repent and give yourself to Him.  He is all that any of us will ever need.
