Happy Monday!

Good morning!

I hope everyone had a great Easter weekend!  He is Risen!!!  And because of that we have a way to eternal life with Him.  🙂  Our weekend was very special and fun…and warm (yay!)  I ate WAYYY too much, put back on a couple of pounds that were lost with hard work…but that’s ok…back to it today.  I tried a few new yummy recipes that I will share:

The first is super easy…roasted cauliflower…my kids are not big fans of cauliflower, but this was a hit!  Just cut cauliflower into large chunks.  Drizzle with olive oil (enough to toss the cauliflower in).  Lay on a tin foiled baking and sprinkle with sea salt and chili powder.  Cover with tin foil and roast for 15 minutes on 450.  After 15 minutes, uncover and continue roasting for 35 minutes.  Soooo yummy!

Another easy one…lightly oil a baking sheet and place asparagus on it.  Sprinkle asparagus with salt.  Wrap in pairs with 1 slice of bacon.  Broil for 10-15 minutes.

The last one for today is baby portobello mushrooms stuffed with crab and cheese.  That recipe can be found here:  https://www.hy-vee.com/meal-solutions/recipes/Cheesy-Crab-Stuffed-Mushrooms-R1513.aspx  This was my personal favorite!  Really, with all that cheese…how could it not be.  😉

Enjoy the rest of the week!

🙂

Martyrs

As we approach Easter weekend…Good Friday, remembering our Savior being beaten and killed for our sins, Resurrection Sunday…knowing He still lives and He has overcome, I thought reviewing this strong courage and faith seemed appropriate.

The strength, courage and faith of these 21 men could only be given by Christ.  They encompass what we all hope we would do in that situation.  They faced the fear, the pain, the anguish not with timidity, but with singing and praising the Lord.  And moments after, they joined their Savior in eternal perfection of Heaven.

Maybe the most amazing part of this story is that there was one man taken with the group of Christians who was not a Christian.  He, however, chose their same fate after seeing their faith.  He saw their faith and knew their God (our God, the only God) is real.  He gave his life to Christ moments before joining Christ in His Kingdom.

When we go into this weekend, we praise the Lord for giving us earthly examples of incredible faith.  We also praise Him for being the only One through Whom we can be saved.  He paid the ultimate price…pain, suffering, death on the cross, taking every sin of all of ours onto Himself.  There has never been greater pain, and He took it for us to offer us a way to Heaven.  He is the ONLY way.  Not anything good we do, but knowing we are not good enough and giving our lives, ourselves, to Him.

Remember His sacrifice this weekend, remember His love, remember His daily grace and mercy.  And talk to Him…thank Him…give yourself up to Him.

Christmas early?

I have never been one to begin celebrating Christmas before Thanksgiving, and never ever before Halloween.  I was always a one holiday at a time girl.  However…this year, I am reconsidering.  If Christmas is the most important holiday…arguably over Easter, because while Christ was resurrected on Easter Sunday, He wouldn’t have walked the earth if He wasn’t born.  But God could do anything you say…yes, of course He could, which is why I put arguably.  I digress.  😉  Without Christ we would have nothing, be nothing, know nothing, have no hope, have no future.  While the world is falling apart…near and far, I may have changed my opinion about starting the holidays too soon.  Perhaps celebrating Christmas as early as you want, or even ALL YEAR, may be just what we need to do.  We have a Savior.  He should be rejoiced.  And we should wait expectantly for Him to come back again.  So…let the Christmas music play and have hope in Christ!

Easter Bunny Flop and other random thoughts

Here we go…just a few random thoughts from this mommy this morning:

“He is Risen!”

What an amazing gift we were given to have Christ die for our sins.  Did you notice that I did not share a verse on Saturday?  Friday was serious and Sunday celebratory…wanted to do some reflection on Saturday.

“Kids looking for Easter eggs are the cutest.”

There is nothing quite like watching little kids bouncing in anticipation over what they may discover.  It was especially amusing after the Easter egg hunt seeing my girl with holes in both knees of her tights and her dress strap torn.

“Easter bunny flop”

I was determined to make this Easter Bunny cake with edible ears.  When the one flopped down, I thought it was pretty cute, but it continued to fall a little too much…oh well…my little guy still thinks I am the ‘best baker ever!’  🙂

“I guess I am officially a runner.”

With running injuries, running 10 miles and not despising it, and actually missing running at times…*sigh*…I suppose I should categorize myself as a runner.

“I think Sarah Palin is awesome!”

I love how she speaks her mind with a smile on her face.

“Whoever thought of trailmix is a genius…and evil!”

I cannot stop eating it!!!!
